As a part of the TRY WINE® COLLECTIVE, we are able to source our Wines from one of the Largest Wine Collections in St. Petersburg, the Cellar at TRY WINE®. Established in 2014, TRY WINE®which is now the Oldest Wine Bar Restaurant in St Petersburg, and with that has grown its Wine Collection to well over 1000 Bottles of Premier Wines from around the Globe. Our Restaurant Concepts enjoy the unique ability to Select some of the Jewels of the Cellar to pair perfectly with our Menu and Multi-Course Experiences.

After a lifetime of exploring the finest in culinary and wine from around the world, and driven by a deep passion for both, Oliver founded TRY WINE® in 2014—embarking on a most ambitious journey. As the creative force behind its vision and direction, he has spent the past 12 years thoughtfully shaping both the wine collection and culinary program. This includes the creation of HELYX™, our highly evolved, eco-friendly restaurant concept, and Theory to Verse™ Multi-Course—our elevated, themed FOOD+WINE experiences. Together with our dedicated team, Oliver weaves these complementary worlds into a seamless tapestry of FOOD+WINE, where every detail is crafted to deliver something both unmistakable and unforgettable.

if you’re looking for something elevated, intimate, and unforgettable, HELYX is a must! We were offered a gourmet five-course tasting menu with expertly paired wines for each course, and from the moment we stepped into the private dining room, we knew we were in for something extraordinary. The space is elegantly understated, intimate, and designed for connection—perfect for small groups and special occasions. The dishes were as stunning to look at as they were to taste: fresh, locally sourced, and presented with care. I’m already dreaming of my next visit.
